Mr & Mrs Johnson

Ok, I am WAY behind in blogging, it's been a crazy few weeks around here.  A few Saturdays ago Austin and I had the pleasure of witnessing one of my best friends Liz and her fiancĂ© Chris get married at the courthouse in Spring.  They just got back from their traditional wedding in Mexico this week but to make it legit they had to get married in the US first.

Yummy

I've found a new "go-to" meal.  One day Austin and I were at the store and I saw a rotisserie chicken and suddenly I wanted chicken enchiladas.  So, I just thought of stuff that would taste good and came up with a regular meal around our house.  It's SUPER easy and doesn't take long at all!

Austin and I LOVE olives so I put black olives and avocados on top.  It's delish.  Add a side of black beans and Mexican rice and you're set!  FYI, if you put this much on your plate you won't finish it.  It looked smaller in the pan.  ;)

Here's what I use and how I make my enchiladas:
- one whole rotisserie chicken, shredded
- 1/4 onion, chopped
- small can of diced green chilies
- can of Rotel, drained
- can of Campbell's fiesta cheese soup
- wheat tortillas
- red enchilada sauce
- shredded cheese

Saute' chopped onion until soft.  Add shredded chicken, Rotel, cheese soup and green chilies and let simmer for about 10 minutes.  Pour a little enchilada sauce into casserole dish to cover bottom of the pan.  Fill 10 tortillas with filling and roll up into pan.  Pour enchilada sauce over the enchiladas and sprinkle shredded cheese on top.  Bake in the oven at 350 for about 15-20 minutes until it's bubbly.

That's it!  Super easy and yummy!

Happy Halloween!

Friday night we went to a costume party at Mike & Amanda's house.  
Can you guess who Austin and I are??  

Oh, just Lindsey Lohan and her ex-girlfriend DJ Samantha Ronson!  Austin kept sending me pictures that he Googled all week of the two of them together.  I guess he thought Samantha glared at everyone...

I always say if you're going to dress up you need to COMMIT to your character!  That being said...notice Austin's skinny jeans.  AND eyeliner! (I'm not sure what's funnier.  Austin wearing eyeliner or the challenge it was to get him to quit blinking his eyes when I was applying it!)   Ha!  I also wore an "alcohol monitoring bracelet" that we made around my ankle.  LiLo has problems, what can I say?

Amanda always decorates so cute!  Some drunken pumpkin punch for those who weren't wearing an alcohol monitoring bracelet.  ;)

Oh Goertz....  That's all I can say about his outfit.  On another note, when the guys saw Austin dressed as Sam Ronson they Googled her and realized that apparently she is quite the smoker.  So, Austin went with my "committing to your character" and had a unlit cigarette hanging from his mouth for the rest of the night.  Nice and classy.  That's how we role.  ;)

Good Times

This weekend started off with me getting to hang out with Miss Leah during my lunch break on Friday.  All the pics and videos were on my iPhone so they aren't great but they're still so cute.  :)

Leah wanted to play a little peek-a-boo.  Yes, I'm aware of how annoying I sound in all these videos but I just can't help it, I love my little Leah Bug.  :)

I guess she's caught on to us wiping her nose ALL the time!  The video is a little bumpy but you get the idea.  Do you think I say "blow your nose" enough times??  ;)

Saturday Austin's parents came into town for a visit.  We had a great time but I didn't get any pics of actual people, just the food!  Ha!  Austin fired up the smoker and we got to work all afternoon.

Cindy and I made this AMAZING three cheese garlic scalloped potatoes.  SOOO good!  Not fattening at all....

YUMMY!  Cindy and I even made homemade pesto for the fresh bread with all the basil in our backyard. :)

Y'all know how I love my leftovers for breakfast!  :)  We sauteed some veggies and added the leftover potatoes with some eggs, bacon and fresh jalapeno cheese bread from Georgetown.  SO good!

After eating all that food we decided to take a nice long walk to the lake behind our house.  B got a little tired on the way home so we took turns holding him.  

How does that tongue even fit in his mouth?!

Poor buddy, his little legs just couldn't keep up with ours!  In his defense, the walk was over an hour and he didn't need to burn off all the food that we ate!  ;)

 It was a great weekend!  Thanks Mark and Cindy for coming and visiting, we had so much fun!
