Show Us Your Life is about holiday recipes this week. One of my favorite recipes is from my best friend Beth's family. It. Is. SO. GOOD!!! Here is the Laaser recipe.
Pumpkin Roll3 eggs
1 c sugar
2/3 c pumpkin
1 t lemon juice
2 t cinnamon
1/2 2 salt
1 t ginger
1/2 t nutmeg
1/2 c nuts
Filling1 c powdered sugar
6 oz cream cheese
4 T oleo (Crisco)
1/2 t vanilla
Mix filling together
Beat eggs for 5 minutes. Add sugar, pumpkin and juice. Mix flour, baking powder, salt and spices together. Fold into pumpkin mixture. Spread into greased and floured cookie sheet. Top with nuts. Bake for 15 mins at 375 F. Immediately turn into a towel sprinkled with powdered sugar. Roll up towel and cake and let cool. Unroll cake, remove from towel, spread with filling, re-roll, wrap in foil and chill well before slicing.
It is delish! I'm making it again this year for Thanksgiving. :)
Here is the low fat version. When I'm making holiday desserts I stick with the full fat stuff but this version is good too!
3 eggs or 6 egg whites
1 c sugar

1 t baking powder
2 t cinnamon
1/2 t salt
1 t ginger
1/2 t nutmeg
Filling1 c powdered sugar
8 oz fat-free cream cheese
4 T oleo (Crisco)
1/2 t vanilla
Calories 196
Fat 4.3 grams
